My first souse vid steak

My first souse vid steak. The white speak is potato, of course.

For Christmas, I received a WiFi connectable Souse Vid machine.

Souse Vid cooking always seemed weird to me – stick something in simmering water for a couple hours only then to finish it off in another way because the piece of meat comes out looking gray. Weird.

And the time… 48 minutes to pre-heat, 2 hours to cook, 5-8 minutes per side for searing, and a about 5 minutes for resting.

I think in terms of taste, charcoal is number one, reverse sear is a second, and souse vid.
